Outdoor Kitchens That Survive Coastal Air
304 vs. 316 Stainless, Counter Materials & Layout Rules
We get the same call every summer from a potential client who is one to two years into an outdoor kitchen installed by someone else: rust spots blooming through the stainless, usually starting at the hinges, the burner bezels, or the fasteners along the seams. Almost every time, the property sits within a mile or two of the coast, and almost every time, the appliances and cabinetry were spec'd in standard 304 stainless without anyone flagging that the site called for something better. Here's what we actually spec, and why.
304 vs. 316 Stainless
Both are chromium-nickel stainless alloys, but the difference that matters on a coastal property is molybdenum. Standard 304 runs roughly 18% chromium and 8% nickel with no molybdenum. Marine-grade 316 adds 2% to 3% molybdenum, which is what gives it meaningfully better resistance to chloride - the corrosive agent in salt air and sea spray.304 isn't a bad material. It handles rain, humidity, and general outdoor exposure fine, and it's the standard grade in the majority of outdoor kitchen appliances and cabinetry sold nationally. The problem is chloride pitting: salt-laden air works into microscopic surface imperfections in 304 and corrodes from the inside out, which is why rust often shows up first at welds, fasteners, and hinge points rather than across a flat panel face. 316 resists that same pitting substantially longer because the molybdenum stabilizes the surface against chloride attack.
How we spec it by distance from the coast. On bluff-top and near-immediate coastal properties - Del Mar, Solana Beach, and the western edges of Encinitas and Carlsbad - we push for 316 throughout: appliance bodies, cabinetry, and especially hardware and fasteners, which see the most direct exposure and fail first. A mile or more inland, in Vista, Oceanside, and the eastern parts of our service areas, 304 for the appliance body is usually acceptable, but we still spec 316 hardware and fasteners, since those small parts are cheap to upgrade and are where corrosion starts regardless of distance from the water.
Be honest about what you're buying. Not every manufacturer offers a full 316 build, and a “marine grade” label on a spec sheet is worth verifying - ask specifically what grade the body, the frame, and the fasteners are, not just the visible panels. A budget outdoor kitchen advertised as stainless steel without a grade listed is very likely 430-grade or lower, which has no nickel to speak of and will show surface rust within a season on any coastal lot.
Counter Materials
The countertop sees the same chloride exposure as the appliances, plus sun, heat off the grill, and whatever gets spilled during three months of summer entertaining.Porcelain slab is our default. Water and salt absorption under 0.5% means it doesn't take on staining or mineral residue, it doesn't need sealing, and it holds up to grill-adjacent heat without discoloring.
316 stainless counters are the cleanest match to a stainless appliance run, and handle heat and salt equally well, but they show scratches and fingerprints more visibly than a textured stone or porcelain finish, and cost tracks with the appliance-grade upgrade.
Granite performs well but needs sealing on a schedule, and coastal moisture in the air accelerates how often that reseal is necessary compared to an inland property.
Concrete is the weakest choice this close to the coast - it's porous, it needs regular sealing to keep salt moisture out, and the coloring is prone to fading and yellowing under sustained UV, which coastal San Diego has no shortage of.
Layout Rules That Actually Get Followed
Material selection gets the attention, but a poorly laid-out outdoor kitchen is a daily annoyance no material fixes. A few rules we hold to on every build:Zone separation. The grill (hot zone) needs a minimum of 6 inches of clearance on each side for heat dissipation and airflow. Prep space (dry zone) needs at least 36 inches of continuous counter. The sink (wet zone) should sit at least 18 inches from the grill so hot grease and running water never share a work area. The refrigerator (cold zone) goes out of direct sun and away from the grill's heat - an unshaded fridge on a west-facing patio works harder and costs more to run.
The work triangle. Grill, sink, and prep space should form a triangle with a combined leg distance of roughly 12 to 26 feet, each leg between 4 and 9 feet. Too tight and the cook is elbow-to-elbow with guests; too spread out and every task means extra steps.
Walkway clearance. Galley and U-shaped layouts need 42 to 48 inches between opposing counters so the cook can turn around without colliding with anyone walking behind them. Main circulation paths through the space should hold at least 4 feet.
Ventilation isn't optional. Any grill built into an enclosed island needs venting panels - one roughly every 4 to 6 feet - to prevent gas buildup and heat damage inside the cabinetry. If the kitchen sits under a roof or pergola with a solid top, the hood needs to be rated for outdoor use and mounted 30 to 36 inches above the grill surface.
Material grade and layout aren't places to cut corners on a coastal build - they're the difference between an outdoor kitchen that still looks and runs like new at year 10 and one that's showing rust and awkward traffic flow by year two.
